Flat bread pizza with Mediterranean vegetables

Healthy Pizza
Serves 2 | 30 Minutes | You need Salt, pepper, olive oil, sunflower oil, 1 frying pan, 1 large frying pan, 1 mixing bowl, 1 baking tray


180g gluten free flour
120-140ml warm water
¼ tsp baking powder
Salt & pepper
3 tbsp sunflower oil
2 garlic cloves
3 tomatoes
100g Goats Cheese
115ml water
1 courgette
1 red onion
1 yellow pepper
1 tbsp olive oil
• Slice the red onion and pepper into strips
• Finely chop garlic
• Roughly chop tomatoes
• Slice the courgette into bite size pieces or make into ribbons with a peeler

1. Heat the oven to 180C
2. Heat 1 tbsp of sunflower oil in a frying pan over a medium heat and sauté the sliced onion for 5 minutes until it is softening
3. Add the sliced pepper to the frying pan and cook for a further 5 minutes until both vegetables are soft. Set aside
4. For the dough, put the gluten free flour, baking powder and ¼ tsp of salt into a bowl. Create a well in the centre
5. Slowly pour in the water (start with 120ml and see how you get on), bring the dough together with a fork, adding more water if it isn’t quite holding together. Set aside.
6. Heat 1 tbsp of sunflower oil in a frying pan over a low heat and sauté the garlic for a minute
7. Add chopped tomatoes to the frying pan with the garlic.
8. Turn the heat up and add the water. Simmer for 10-15 minutes until the tomatoes have broken down and you have a sauce
9. Meanwhile, make the pizza bases. Split the dough into two and on a piece of baking paper, flatten each piece as much as you can with you hands to form
