Masala Black Bean Patties with Sweet Potato Fries

Ingredients

  • 240g blackbeans
  • 1 tbsp garam masala
  • 2 sweet potatoes
  • Salt & pepper
  • 3 tbsp sunflower oil
  • 200g spinach
  • 1 inch of ginger
  • 100ml of water

Prep

  • Slice Sweet Potatoes into chips, skin on.
  • Peel and finely chop the ginger.
  • Heat the oven to 180°C

Step 1:

Place the sweet potato chips on a lined baking tray, drizzle with the sunflower oil and season well with salt and pepper. Bake in the oven for 30 minutes.

Step 2:

Next, drain the blackbeans and pour into a bowl with the 1 tbsp garam masala and salt and pepper.

Step 3:

Mash the blackbeans well with the back of a fork.

Step 4:

Shape the blackbean mixture into 2 burgers, squeezing them gently with your hands.

Step 5:

Heat 1 tbsp of sunflower oil in a frying pan and gently fry the burgers for 1 minute on each side (reshape as necessary).

Step 6:

Next, place the burgers onto a lined baking tray and bake in the oven for 10 minutes

Step 7:

Heat 1 tbsp of sunflower oil in a pan on a low heat and sauté the chopped ginger for 2-3 minutes.

Step 8:

Add the 200g spinach to the pan with the ginger the water and turn up the heat.  Cook the spinach for 1-2 minutes until wilted

 

Step 9:

Serve the blackbean burgers on a bed of the wilted ginger spinach with the sweet potato chips on the side.
