Flat bread pizza with Mediterranean Vegetables

Ingredients

  • 180g gluten free flour
  • 120-140ml warm water
  • ¼ tsp baking powder
  • Salt & pepper
  • 3 tbsp sunflower oil
  • 2 garlic cloves
  • 3 tomatoes
  • 100g Goats Cheese
  • 115ml water
  • 1 courgette
  • 1 red onion
  • 1 yellow pepper
  • 1 tbsp olive oil

To make these pizza’s you need: salt, pepper, olive oil, sunflower oil, 1 frying pan, 1 large frying pan, 1 mixing bowl, 1 baking tray.

Prep
• Slice the red onion and pepper into strips
• Finely chop garlic
• Roughly chop tomatoes
• Slice the courgette into bite size pieces or make into ribbons with a peeler
• Heat the oven to 180C

Step 1:
Heat 1 tbsp of sunflower oil in a frying pan over a medium heat and sauté the sliced onion for 5 minutes until it is softening

Step 2
Add the sliced pepper to the frying pan and cook for a further 5 minutes until both vegetables are soft. Set aside

Step 3

For the dough, put the gluten free flour, baking powder and ¼ tsp of salt into a bowl. Create a well in the centre

Step 4
Slowly pour in the water (start with 120ml and see how you get on), bring the dough together with a fork, adding more water if it isn’t quite holding together. Set aside.

Step 5
Heat 1 tbsp of sunflower oil in a frying pan over a low heat and sauté the garlic for a minute

Step 6
Add chopped tomatoes to the frying pan with the garlic.

Step 7
Turn the heat up and add the water. Simmer for 10-15 minutes until the tomatoes have broken down and you have a sauce

Step 8
Meanwhile, make the pizza bases. Split the dough into two and on a piece of baking paper, flatten each piece as much as you can with you hands to form
